Ingredients:
2 oz vegan cream cheese alternative
3 spicy vegan sausage patties
2 tbsp olive oil
1 cup petite diced onion
1 clove garlic
1/4 cup water
8 oz whole mushrooms
1 tbsp mixed herbs (I used Complete Seasoning)
Preheat oven to 350 degrees.
Clean mushrooms and remove stems. Chop stems and reserve. In a small saucepan, cook sausage patties over medium heat in 1 tbsp. of olive oil. Crumble patties and set aside.
Return saucepan to heat and add remaining olive oil, onions, and garlic. Cook until soft (about 3-5 minutes). Add chopped mushrooms and cook additional 2 minutes. Add water and cook another 3-5 minutes. Remove from heat.
Combine cream cheese and herbs. Add sausage patties and sautéed onions, garlic, and mushroom. This mixture can be made in advance and refrigerated.
Stuff mushrooms and arrange on baking sheet lined with wax paper. Bake uncovered 15-20 minutes.
