Strawberry Salsa




1            large cucumber
2 c        diced strawberries

1 c         petite diced carrots
1/2 c     petite diced celery
1/2 c     petite diced onion
1/2 c     petite diced green peppers
1/4 c     vegan mayo

1 tbsp   mixed herbs (I used Complete Seasoning)

Combine all ingredients in mixing bowl. Refrigerate for an hour.


Eat as side dish or add to tacos, wraps, sandwiches, and crackers.
